To make a roast chicken, preheat the oven to 450 degrees Fahrenheit. Remove the pouch of the neck, gizzards, and heart from the cavity, and pat the chicken dry with paper towels.
If possible, refrigerate the bird without a covering for two hours to help the skin dry out and get crisp when roasted. Then, season it inside and out with salt and ground pepper.
Lastly, roast the chicken in an oven-proof pan on the middle rack of the oven until the skin is well-browned and cooked through. Let it rest for 15 minutes before carving.
